Drawing inspiration from his French heritage and love for feasting, Franck Dangereux’s chosen dishes will include recipes for smoked salmon rosti starters, five sides (including the crispiest roast potatoes you’ve ever tasted) and your choice of Duck à L’Orange, fillet, chicken or pork belly. Franck’s brought a personal touch to each of the dishes on the menu, from the pork belly, which incorporates foraged pine needles, to the rostis, which are finished with a sprinkling of pink peppercorns – beautifully bright and native to South Africa. It’s these little touches that make the dishes a home run for festive feasting.
If you haven’t heard of the inimitable Franck – you’ll certainly know him by his restaurants. Previously the head chef and co-founder of La Colombe (then voted one of the top 15 restaurants in the world), he now owns The Foodbarn and Foodbarn Deli in Noordhoek – two of the city’s most popular spots for fine dining and rustic farmhouse breakfasts.
