Mmmm… summer salad

This is just so, so refreshing! For those of you who love entertaining or simply just indulging in exotic flavours, we have no doubt that you will love this Summer Pork and Watermelon Salad concocted by the one and only Jamie Oliver. You can roast the pork the day before you want to  serve it if you like. It’s also great with sticky rice. For us, the salad idea is a winner for summer in Durbs… the refreshing watermelon, crunchy greens and chilli hum from the dressing make this a knockout dish. Ingredients

1 thumb-sized piece of ginger, finely grated

2 tsp black peppercorns

1 tsp allspice

1kg higher welfare pork belly

Olive oil

3 tbsp. honey

1 tbsp. soy sauce

2 tbsp. sesame seeds

1 small watermelon, cut into chunks, thumb-sized pieces

½ bunch of coriander, leaves picked

½ bunch of spring onions, sliced

25g pickled ginger, for ginger dressing

1 lime, for ginger dressing

1 tbsp. fish sauce, for ginger dressing

1 tbsp. reduced salt soy sauce, for ginger dressing

1 red chilli, finely chopped, for ginger dressing

 

Method

Preheat the oven to 160°C. Rub the ginger, peppercorns, allspice and a pinch of salt into the pork. Place the meat in a roasting tray along with a splash of water, cover with tin foil and roast for 2½ – 3 hours, or until cooked and easy to pull apart. Let the pork cool, then cut into chunks. Heat a little olive oil in a large frying pan over a medium-high heat, add the pork and cook for 2-3 minutes, or until golden on each side. In the last 30 seconds, drizzle with the honey, soy sauce and sesame seeds. For the dressing, shake all the ingredients together in a clean jam jar. Toss the pork with the watermelon and the dressing on a platter. Serve scattered with coriander leaves and spring onion.
