Mother’s Day is all about spoiling your mother and showing your appreciation for her, what better ways to do this than helping her stay healthy.

Here are some hints and tips that can help you give your mother a wonderful Mother’s Day without having to worry about her health.
Delicious Homemade Meal: For many mothers, a simple and heartfelt gift is more than enough to make their day extra special. If your mother is the main chef at home, spoil her with some relaxation while you prepare her favourite meal followed by a decadent yet healthy dessert.
Snack Basket: Packing a basket of nutritious goodies for your mother to nibble on is also a great idea. Fill the basket with anything from biltong, whole wheat cookies, mixed nuts, vegetable pieces and crackers.
Spa Day: Book a spa day at a local salon. There’s nothing better than a day at the spa for some relaxation to reduce physical pain and fight overall stress.
Yoga Session: Yoga is a great tool for staying healthy. The benefits associated with yoga are: weight loss, cardio and circulatory health, improved respiration and energy, increased flexibility and maintain a balanced metabolism.
Gym Gear: Whether she goes to the gym or not, any mother would appreciate new gym gear as a gift. You can buy a water bottle, towel, gym clothes and put them in a sports bag.
Below is a delicious recipe for ‘Creamy Bacon Mushroom Thyme Chicken’ from one of our clinicians – Benda at the Meyerton/Rothdene Diet Clinic which you can use to make a nice meal for your mother.
CREAMY BACON MUSHROOM THYME CHICKEN
4 bone in chicken thighs or boneless chicken thighs or breast
• 1 tablespoon olive oil
• 2 teaspoons Italian seasoning
• Sale and pepper
CREAMY BACON MUSHROOM THYME SAUCE:
1 tablespoon olive oil
• 8 ounces white mushrooms, sliced
• 6 slices bacon, cooked and crumbled
• 1 cup heavy cream
• ½ teaspoon salt
• ¼ teaspoon pepper
• 1 teaspoon garlic powder
• 1 tablespoon fresh thyme, stems removed
Preheat oven to 350 degree Celsius. Heat a large skillet to medium high heat. Add the chicken thighs and season with Italian seasoning and salt and pepper. Pan Sear each side of the chicken for 1-2 minutes until brown and place skillet in oven. Bake until chicken is cooked throughout. Place chicken aside on a plate.
- Add olive oil to the skillet and sauté the mushrooms until soft. Add the bacon, heavy cream, salt, pepper, garlic powder and thyme. Bring to a simmer until the sauce starts to thicken. Add the chicken back to the skillet and heat for another minute. Serve immediately.
